2015 Cabernet Sauvignon

Matthews Cabernet Sauvignon is a Washington-born nod to the classic left bank blends of Bordeaux and Medoc. An incredibly selective blending process allows us to produce a wine that is structured, but remarkably balanced. Simultaneously elegant and fun, you can think of this as a wine that looks flawless in a tux, but isn’t afraid to loosen the tie, roll up the sleeves, and throw down on the dance floor. Cabernet Sauvignon leads the way, with Cabernet Franc and a touch of Merlot rounding out the blend and smoothing any rough edges. Beautiful, explosive aromatics announce the wine before you even pour it, and that opulence is replicated in the dense, vibrant mouthfeel. This is a really fun wine to drink, but it won’t beat you up with too much tannin. Bordeaux-style blends are famously terroir driven, and ours is no exception. Cabernet loves to grow in Washington, where our arid climate, large temperature swings and long growing seasons give us the powerfully ripe fruit you’d expect from California, with more of the balance, complexity and freshness you’d expect from a French blend. Matthews Cabernet, in particular, is characterized by its intense spice, silky texture and excellent transitions.

On the palate, it's full-bodied and silky, with good overall balance and nicely integrated acidity. Possessing sweet tannin and solid length, drink it over the coming decade or more.”"

Tasting Notes

A dense and fresh nose of blackberry jam, plum skin, black currant, vanilla bean and spice. Swirling brings up sweet red fruits reminiscent of ripe strawberry, red currants and black fruits with Asian spices and black tea. The palate is thick with dark fruits, spice and vibrant acidity. Mouthwatering, with a great combination of fruit, spice and tension. Beautifully restrained while providing new world fruit and a plush mouth feel with plenty of age ability.

Additional Information about this vintage

Harvest: After a warm growing season, harvest began early morning on September 10th, 2015 and continued through October 20th. We are excited about the freshness captured in this vintage. Despite heat levels, the fruit maintained its ability to produce wines with energy and vitality. All of our wines are hand harvested, picked during the colder hours of the day/night and delivered to the winery in the early morning. We drop fruit in the vineyard during veraison to ensure the proper fruit yields for each block. We also do most of our cluster sorting in the vineyard. This allows the fruit to arrive at the winery without need for much additional sorting.

Vinification: This wine was fermented mostly in concrete tanks with a very small amount fermented in stainless steel and aged in 80% new French oak for 21 months. The Matthews Cabernet Sauvignon is meant to have ripe but complex aromatics and a more compressed palate. In contrast to something like the Tenor Cabernet, which has more volume and flesh, it will have more tension and grip, while also having some serious verve and vibrancy. The addition of 6% Cabernet Franc adds aromatic complexity and a touch dryer tannin that helps with length and persistence.
